The Planning Commission recently approved a proposal for the construction of a 40×40 stick built barn to house the “Local 315” Micro-brew. The farm at 3202 Warners Road in Camillus (between Pottery and Devoe roads) has been in the Mathews family since 1972. Dan Matthews and his siblings — Marcus Mathews, Mo Mathews and Jeanne Mathews Fox — have been growing hops there for four years. They hope to begin producing beer in small batches this fall, and grow from there. The start-up brewing system will make 1 barrel at a time, making it a real nano brewery. Dan Mathews hopes to move up to a 7- to 10-barrel system within a few years. In addition to hops, Local 315 will uses some of its own barley, plus pumpkins and other produce that can go into beer. The brewery still needs some site approvals from the town of Camillus, but after that it should take only about six weeks to build out and start brewing, Mathews said. The building to be built will be a tasting room. Mr. Mathews plan is to be open approximately 3 pm to 7 pm during the week and is unsure about weekend hours. The brewery will have a lineup of the Original 6 beers (the Mathews family are hockey fans), including an IPA, Strawberry Blonde, Belgian Wheat and Porter, with two to be named later.
